We recently started a Whole30 challenge, where you give up added sugars, alcohol, dairy, grains and legumes for 30 days. And whenever we do this challenge, the first thing we start thinking about is: What are we going to have for treats?! When you start researching and getting creative, you’ll discover that there are lots of tasty treats to eat, even after quitting so many foods.  It’s just about reframing your idea of what a treat really is. It may not be a slab of hazelnut chocolate, but this Wonderful Walnut Egg and Banana Cake is just as delicious. Moist, yummy, highly nutritious, and ridiculously easy to make. Happy baking!


Healthy eating doesn’t need to be complicated.

Recipes like this are my absolute best. You are taking 3 simple ingredients, mixing them up, and putting them in the oven. Done. Easy as that.

And what’s more, you’re still getting a good dose of nutrients too. It’s a win-win.

Eating healthily really doesn’t need to be complicated. So if you prefer, you can keep it simple like me.

Of course, cooking something amazing like an Indian Curry or a Spaghetti Ragu takes time, and it’s totally worth it.  But when you’re busy during the week, and just feel like something quick, easy and still healthy, recipes like these are saviours!

I was so amazed that such a simple recipe could even exist 🙂

You can actually just use banana and egg. The walnuts, cinnamon and vanilla extract are all optional ingredients. How cool is that? With just bananas and eggs you could make a tasty little cake. Really? Yip.

And so, there is no excuse. Unless you’re a vegan or allergic to bananas, go ahead and try this recipe!

Tips to make it just right:

Use ripe bananas if you can. The riper the better, as they add a sweeter stronger taste, and help make the cake moister.

Grease your baking dish well, so that your cake doesn’t stick to the bottom and break apart.

Add raw walnuts to the mix to add crunch. Lightly break your walnuts and mix into the mixture before putting into the oven. I also add 4 big walnut pieces to the top of the cake 10 minutes into baking, to add extra crunch on the top.

Optional: Add Vanilla Extract and Cinnamon for extra flavour.

Double up your ingredients if you’re using a bigger baking dish. My little baking dish is only 16.5 cm wide and 3 cm deep. If you have a bigger dish, simply add more of everything i.e. an extra banana, an extra egg, and more walnuts. Or just double everything up. You can then fill up your dish, and use the leftovers in other ways. For example, you could pour the rest into a muffin tray and bake some extra mini muffins-type-things at the same time. 🙂

Walnut Egg Banana Cake crop

 3 Ripe Bananas
 2 Eggs
 40 g Raw Walnuts (1 big handful)
 0.50 ml Vanilla Extract (a couple drops) (Optional)
 0.50 tsp Cinnamon powder (Optional)

Heat oven to 240°C

Add bananas (peeled and chopped into big pieces) and eggs into a bowl, and blend. A hand blender works well. Or, if you don't have a blender, just use a fork and then a whisk by hand. Blend until the mixture is smooth and there are no lumps.

Optional: Add a couple drops of Vanilla Extract, and blend again.

Optional: Put 4 Walnuts to the side to add on top of your cake later. Lightly break the rest of the raw walnuts with your hands, and stir gently into the banana-egg mixture.

Grease the inside of your baking dish with spray, butter or oil. This will prevent your cake from sticking to the bottom.

Bake in the oven for 10 minutes on 240°C.
After 10 minutes have passed, quickly open the oven and place your 4 walnuts on top of the cake for decoration and extra crunch. Quickly (and carefully) put it back in the oven.

Turn down the oven to 180°C and bake for another hour.

Take your cake out of the oven and let it rest. Then... tuck in! Yum!
