Avocado and egg may sound like a strange combination, not to mention baking avo. At first, I was a little sceptical. However, both these ingredients are tasty and nutritious so I decided to give it a go. A pleasant surprise, to say the least, because this easy Baked Avocado Egg Breakfast is one tasty way to start the day!

This is such a simple and nutritious meal. Even if you aren’t 100% sure you’ll like the combination, just give it a go anyway. Even if it turns out to not be for you, you would’ve pumped your body with nutrients in the process of finding that out. No harm in trying.


Tips for making the perfect Baked Avocado Egg Breakfast:

After making this breakfast, here are some lessons I learnt along the way:

Tip: Break your eggs into a separate bowl, instead of directly pouring them into your avocado halves. This way, you can add the egg yolk first, and then keep adding your egg whites until it fills up.

Tip: If you’re a meat-eater like me, sprinkling some crispy bacon over the top at the end adds a lovely touch.

Tip: Some recipes suggest adding your parsley and onions before baking, but instead add them fresh at the end. This will add extra freshness to the dish.

Tip: Eat with a spoon right out of the avo half. Yum!

 1 Fresh Ripe Avocado
 2 Fresh Eggs
 2 tsp Spring Onion
 1 tsp Fresh Parsley
 0.25 cup Bacon
 1 pinch Salt & Pepper

Preheat oven to 425 ºF / 220 ºC

Prepare Avocados: Cut ripe avocados in half. Scoop out a little out of each avo half to make space for the eggs - This will depend on the size of your eggs. Add your avocado halves to a baking tray or dish, in a way that keeps them upright.

Add the Eggs: Crack eggs into a separate glass bowl. With a tablespoon, carefully add a yolk to each avo half. Now add the egg whites to each avo half until they are almost filled to the top.

Season each filled avocado half with a pinch of salt and pepper.

Carefully put the avocados into the oven, making sure they stay upright and the egg doesn't pour out. Bake for 15-18 minutes.

While the Avocado Eggs cook, fry up the bacon pieces and set aside.

Chop up the spring onion and parsley and put to the side.

After 15-18 minutes the Avocado Eggs should be ready. Check on them, and if the egg whites are white, they are ready to go. Pull them out the oven and let cool for a couple minutes.

Put Avocado Eggs on a plate and sprinkle the bacon, onions and parsley over the top. Get a spoon and tuck in!
